So much reader mail comes in with recipe requests, I thought this week I'd just try to answer a few. Hopefully these recipes will be of interest to a lot of different people. Next week I'll share again what has been going on in this busy household!
A reader in Cadiz, Ohio, asked for a cobbler recipe using rhubarb. This recipe looks really nice when it is done, and it tastes great served with a scoop of ice cream!
Rhubarb Cobbler
Topping
1 cup all-purpose flour
2 tablespoons sugar
11/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter or margarine
1/4 cup milk
1 large egg, slightly beaten
Filling
1 cup sugar
2 tablespoons cornstarch
1/4 teaspoon ground
cinnamon
4 cups chopped rhubarb (1-inch pieces)
1 tablespoon water
1 tablespoon butter or margarine.
Preheat the oven to 400 degrees.
To make the topping: Combine the flour, sugar, baking powder and salt together in a bowl. Cut in the butter using the tips of your fingers until the mixture resembles coarse crumbs.
To make the filling: Combine the sugar, cornstarch, cinnamon in a medium mixing bowl. Add the rhubarb and 1 tablespoon water. Cook and stir until the mixture boils. Cook 1 minute more.
Pour the filling into an 8-by-8-by-1 1/2-inch baking dish. Dot with the butter. Immediately spoon the biscuit topping on the filling in six small mounds. Bake for 20-25 minutes. Serve warm.
Serves 6.
Homemade
Meatballs
2 pounds of hamburger
1 cup crumbled crackers
2 bottles of ketchup (bottle size depends on your taste, you can use homemade ketchup or store-bought)
10 ounces of apple jelly
Mix ground beef and cracker crumbs and shape into balls. Brown in a skillet on medium heat. Mix ketchup and jelly together and pour over meatballs. Simmer for 25 minutes.
Summer Macaroni Salad
3 cups cooked macaroni
3 eggs, boiled and chopped
1/2 cup carrots
3/4 cup celery
1 cup salad dressing
1/4 cup sugar
2 teaspoons mustard
salt and pepper to suit taste
In a large bowl mix all of the above. Stir and toss.
